The space at 25 Winooski Falls Way has been many things in the past five years: bake shop, pop-up restaurant incubator space and catering kitchen. Soon, the storefront will add "dessert bar" to its list of occupants. Starting June 1, Sweet Babu owner Shana Goldberger plans to open for evening sweets and drinks Thursday through Saturday.

Fans of the take-out lunches and suppers at Blossom Whole Food Kitchen and Catering, fear not: Sweet Babu is sharing the space with Blossom owner Tessa Holmes, Goldberger said, and both businesses will remain active.

Local foodies may recall tasting Goldberger's sweets at her 2016 pop-up events when the space was home to the Incubator. "I've always loved this space," she said. "I've always wanted to have my biz in it." Blossom's catering operations and Babu's baking happen at different times of day, so sharing the rent made sense.

Since her pop-up days, Goldberger has expanded her wholesale business; her cookies, cakes and other treats are now available at City Market, Onion River Co-op; Healthy Living Market & Café; and Natural Provisions Market.

During dessert-bar service in Winooski, visitors can expect plated desserts such as New York-style cheesecake topped with seasonal fruit compotes, ever-changing cakes by the slice, and blood-orange walnut upside-down cake with buttermilk ice cream. A couple of savory items, such as matzoh ball soup and a hummus-muhammara plate, hint at the cook's Jewish roots. "This is loosely inspired by a New York Jewish deli," said Goldberger, who plans to serve Dr. Brown's kosher sodas and rotate through Jewish American comfort desserts around major holidays.
