Healthy Living and Hunger Mountain Co-op aren't the only groovy groceries to undergo significant expansions of late. The Middlebury Natural Foods Co-op recently increased its edible options as well. "Two weeks ago we went to a full-service deli case with meats sliced to order, ranging from regular turkey, roast beef and ham to high-end salamis and cheeses," enthuses Assistant Deli Manager Katee Rocker. "We've got 15 to 20 different kinds of olives as well."

In addition to classic salads such as curried chicken and sweet ginger tofu, shoppers can now find a line of 12 different green salads. "It's salad land!" Rocker exclaims. There are also more pre-made sandwiches, along with ones made to order. New entries include muffaletta, Italian subs and a turkey Reuben.

Most of the changes are direct responses to customer requests gleaned from surveys. Says Rocker, "We're trying to move it along and really go with the flow of other co-ops. Times are changing."
