The luxurious hotel, which recently underwent a $20-million upgrade, has paired with award-winning Consider Bardwell Farm to create a sharp, aged goat’s-milk product called “Equinox Cheese.” Look for it at the property’s Falcon Bar, which offers mountain views along with its cheese plates, single-malt scotches and artisan chocolates.
