Revolution Kitchen — It seems impossible, but between 2008 and 2013, Vermont’s largest city didn’t have a strictly vegetarian restaurant. Then came Revolution Kitchen. Owners Debra and Peter Maisel had operated a successful veggie eatery in the Hudson Valley and brought their very best dishes to Burlington. Omnivorous diners won’t miss the meat in plates such as crispy scallion pancakes with spicy aioli; goat-cheese-and-fig wontons with pistachios and maple-citrus vinaigrette; and seitan piccata with piquant lemon-caper sauce. Throw in the modern décor and well-curated drink list, and Revolution reaches beyond the ethical into the sensual: It’s a great spot for date night. Don’t leave without trying Debra’s famous banana cream pie.
