Shy Guy Gelato — Vermonters aren’t shy about their love of Shy Guy Gelato, an Italian-inspired gelateria with a local twist. Cofounder Paul Sansone spent time perfecting his gelato-making technique in Italy, but he and partner Tim Elliott take their flavor inspiration from the Green Mountain State, developing daily menus based on customer suggestions and farmers market fruits. The Shy Guys first dipped into the ice cream business in 2014; now their kiddie-cup-size Burlington empire includes a cheery blue St. Paul Street storefront and a Church Street cart. If a cup of dark chocolate sorbet, fior di latte, creamy plum or lemongrass Thai basil isn’t enough, not to worry: Shy Guy packs pints to take home.
