It's year three of Vermont Restaurant Week and the third time that 3 Squares Café chef Matt Birong has created an exciting international dinner menu. In 2010 it was Mexican fare. Last year, Cajun and Creole spices flavored the dishes. This year, Birong invites diners for a French bistro extravaganza.
The three-course, $35 menu includes six entrées, which range from meat-free ratatouille vol-au-vent to cassoulet filled with lamb sausage, goat confit and pork belly.
Save room for dessert — options include tarte-tatin and a trio of French-inspired cheeses.
